This is new in Cydia now...record phone calls on your iPhone Now...the author of this app is (in my opinion) one of the best jailbreak app developer around..

I'm sure there is a few legal issues with this in some countries and US states...but a nice option to have in general..?

It works great and there is already a tweak to disable the warning! This one is long overdue.

You are right. It is called Audio Recorder and is available now in more than one repo. Just do a search.
