Can someone explain this to me... if I jailbreak my iPhone, do I have to un-jailbreak it afterwards or can the iPhone live happily out of jail?

We all live happily out of jail. Jailbreak is done once on the iPhone and then the iPhone will work just fine broken out of jail. If another update occurs in the future you will need to restore, update, sync, and then break your iPhone out of jail again, then re-mod.
