I'm on vacation now and want to update, but I don't want to lose my music/movies/contacts/notes/etc. Is this possible or do I have to wait until I get home? (I am an iTunes idiot by the way)

you can use multiple computers to sync/update your iPhone. Just be sure to not automatically sync so you can uncheck all the things you don't want changed on your iPhone.

It's great because you have complete control of your syncing so you never have to update/delete/lose anything you don't want to.
