I want to make sure I'm understanding this correctly......photos in the recently added folder only stay around for 30 days from the time they're added and then they disappear from that particular photo but still remain under "collections/years"? Is this right or have I completely lost my mind???? Feel free to call me out if you believe I have no idea what's going on here

That's about right, you can find all your photos under collections. In addition to the recently added there is a recently deleted and those photos also stay for 30 days unless you go in and delete them again. Kinda like a recycle bin for your photos.

The recently deleted I understood, just making sure I understood the recently added. Thanks so much! :)
