I've been running it since its release with NO stability problems. I didn't have any problems with 6 stability either.

Can't get the video app to work. Starts to open a movie and then crashes. Rebooted multiple times and still no luck.
Have you tried the reboot where you press and hold the power button and the home button and do not let them go until after the screen shuts off and the Apple reappears? I believe that's called a hard reset but I can't remember?

Will iTunes alert you when a new beta is out, and automatically download it?

I don't think iTunes is keeping up with betas but I'm usually wrong more than once a day. You can just go to settings and software update on your ipad 2. I'm not sure about if it is the same for the iPhone.

For those on Verizon, and on B7, anyone able to check PRL and ERI status by dialing *#5005*4357#

When I dial, I get an automated message from Verizon that the call could not be completed. This feature apparently worked in the 4.2.x series of updates.
