We all love the creativity of designing games for iOS but it would be dandy if we could plug a controller in the bottom for a wide selection of games. Why is this luxury being ignored?

Because it's a touch screen device, not a console. Adding an external controller basically would turn it into a TV monitor.

Some games let you use your iPhone as a controller for the iPad game.

I would love to see more.
