iPhone power off & on

Have noticed that when I switched my iPhone 5 off and then plugged it to charge, the iPhone has been automatically switched on when connected to power!

How to stop this?

You can't prevent it, but you can turn it back off. While it's still connected to the power charger, power it off after it reboots.

I'm not sure what the difficulty is. I've been used to this way since 2007. To change it now would bother me.
That's why they keep it that way. Apple knows how important you are and they don't want to bother you. :D

I believe most phones do this. The phone I had before my iPhone 3G did this.

Some people like to watch the nice battery image as it fills up with juice. As others have said, just turn it off if it bothers you.

Mine stays on during the overnight charge for updates & cloud syncing. I usually turn down/off the sound to avoid notification alerts.
