Moving to 4.0

Ok, I recently discovered Apple's most recent attempt to prevent Jailbreak, which was not allowing a Jailbroken iPod to sync with iTunes. So I went into Cydia, got the new SHSH titles and my iPod began to sync normally. However, about halfway through the sync, iTunes disconnected my iPod and said the disk was no longer connected. So I've decided that until there is a stable way to have both Jailbreak data AND sync with iTunes, I would rather have my iPod on 4.0. My concern is, will iTunes just disconnect my iPod again during the restore process, or should it be safe to update?

I have a 2nd generation iPod touch with 3.1.2 firmware.

What is jailbreak? Everyone talks about it but I don't know what it is. Help me put please lol
