Does anyone know how much memory the OS will take up on the iPhone? Because with just 4 or 8 gigs there to begin with, you wouldn't want it using up a whole lot of space.

It wont take up a lot of space. My guess is youll have 3.5-3.75gbs to use with the 4gb model and 7.5-7.75gbs to use in the 8gb model.

This might be right, but if so, it must be a very compact version of OSX. I can see that being around right, but I might say that there will be 3GB to use on the 4GB version and 7GB to use on the 8GB version. That might be a little closer but I doubt you are far off.
