You can always restore the phone back to factory settings if you want to go back to a stock phone. A few reasons for jailbreaking a 3GS would be to add SBSettings (toggles for quick access to settings), running background apps, custom themes and fonts, tethering, saving YouTube videos to the phone, ability to read and respond to texts from within other apps, abitlity to read an email from within an another app, being able to use custom text and email alert sounds, live weather on the status bar and home screen, spoof a phone number, unlock the phone so it can be used with T-Mobile, and video ringtones.
