But if it doesn't?

The iPhone supports SSL for Email if you're Email server is set up for it.
OK, let's assume that I setup iPhone to use SSL but my server DOESN'T support it.

Will iPhone give me an error and fail cold, or will it fall back to the insecure ports?

It will give you an error as it will be unable to connect securely to the server

If that's the case then setting this up with Dreamhost was dead simple.
