Stopping firmware update

I have an unlocked iPhone on its way with firmware 1.02. My iTunes currently states the mobile device version to be 1.1.1.1. Can I keep my current iTunes and just decline the firmware update? Will I be able to still sync with iTunes if I can refuse the firmware update?

You can decline the update and your iTunes will work fine.

just to double check

Sorry for my ignorance but I have yet to even hold the iPhone as I am in Australia. Just to double check, if I connect this 1.02 iPhone to my computer with my current iTunes, will I get a prompt saying something like "do you want to update the firmware (from 1.02 to 1.1)" to which I can refuse or does it update the firmware automatically when syncing? Thanks.

First of all, disable all automatic updates. If you do happen to have it on, yes it will prompt you.

If you have to restore your 1.0.2 iPhone for some reason use this method:
