I have a 5th gen iPod and also an iPhone. Currently, my computer is setup to sync the iPod with iTunes. What will happen once I add the iPhone? Is iTunes smart enough to allow me to keep separate libraries with each device and keep them completely separate from one another? Like... I'd like to sync my contacts, etc with the iPhone, but not on the iPod... Is there any documentation on how to do this?

Thanks!

I tunes is smart enough. Just connect the iPhone and go through the tabs and select what you want to sync to the iPhone. The ipod will remain completely separate. If you music collection bigger then you iPhone just make a play list of the stuff you want on the iPhone and only sync that one play list.

You can most certainly sync a ton of them at once. I regularly sync my iPhone, 5G iPod and my Nano all at the same time. They all work fine and iTunes is smart enough to keep track of the options of each. It would be kind of dumb of Apple if they didn't :)
