I had something very similar happen last week on a jailbroken 1.02 phone. Each time I tried to boot I got a kernel panic and it would cover the screen in white text. I basically continued to reboot until it would make it to the desktop then did a clean restore via iTunes. After that I bit the bullet and went to 1.1.1 and have been fine with the fast website jailbreak.

I would try to do this and see what happens. Sorry I cannot be of more help.
