Hi, I am wanting to update iPhone 4S to 5.1.1
But what happens if I do it through the phone it's self?
(by going to settings)
I know I will lose jailbreak but will I lose everything music, photos ect...?

I have never updated on my iPhone but I thought if you did, it would remove the jailbreak not pics, videos etc. It only does that if u restore ( on your pc) I'm not 100% but I'm sure others here would shed some light.

You won't be able to do the OTA (over the air) update on a jailbroken phone. It will give you an error. It needs to be done through iTunes.
Backup / sync your device, do the update to the newest IOS, restore from the latest backup then jailbreak.
