Does the new voice iMessaging take more cell data than text does (obviously I mean when not on wifi)?

If you have the iPhone 6 or Plus, you can make phone calls over wifi and save your minutes. That's if you are on a wireless network.

Okay, also wondering what it means about disappearing in 2 minutes. Is that AFTER it is read and if the recipient does not click on "keep"?

Depends on your carrier. As far as I know, no carrier in Canada even supports Wifi Calling yet.

Yes. It does 2 minutes by default to save you storage space on your device, however it will have no effect on how much data you use.
