Ok, I must be doing something wrong here.

I have a JB 1.1.4 and I disabled updates a few days ago so that I wouldn't brick my phone with the new update.

Now, I want to get 2.0 so I click "restore" but when I do it says "automatically checking for iTunes and iPhone updates is disabled. Would you like iTunes to check for a new iPhone software update?"

I can click "check" or "cancel". I clicked cancel and nothing happens.

What do i do to restore?

I would restore to a fresh 1.1.4, not jailbroke.
Then upgrade to 2.0
I hope you haven't upgraded iTunes yet.
If you have already upgraded to iTunes 7.7, then all you can do is
just upgrade to 2.0
Hope this helps........

Im confused

I am trying to restore to a fresh 1.1.4. It wont let me, its making me check for updates first to upgrade iTunes. Should I just let it update even though my phone is still jailbroken?

Yeah, you should be fine. Just set up as a new phone on the 2.0, just to make sure it wipes everything clean. So no traces of your jailbreak will
remain on phone.
