i was wondering, within a year if theres anytype of defect like screen freezing/dead pix, basically any defect, can we return it for a new one, or be fixed with no charge?

Yes, your phone is covered for one year for manufacturers defects. Applecare would extend that to two years.

This does not include loss, theft, accidental damage, etc.

The 14 days was a return period in case you wanted to return the iPhone outright (or with a 10% restocking fee on open box units).

The 1 year is the manufacturers warranty.

You sure can! You can purchase Applecare at any time during the one year manufacturers warranty.

P.S. If you ordered your iPhone online, the manufacturers warranty begins when you ordered it, not when you received it. Just a little tip for those who ordered online.
