I'm pretty sure the clever folks at Apple could have figured out a way to do it without voilating some patent. There is no excuse good enough as far as I'm concerned for this, especially with multi-touch.
And iPhone's not a smartphone. It has to have computer like functionality for it to deserve that title. Until Apple gives it a file system and lets us install 3rd party apps on it, you should call it a feature phone.

Computer like functionality, that's pretty much anything that uses the flow of electrons to represent ones and zeros... So naming conventions aside, I think your idea of what a smartphone is needs to be reevaluated.
As for the smart people at Apple, there may be the event I want to copy bits of text from an email or a webpage to my notepad, so where's my copy and paste Apple? Smart indeed

That is one thing that I want to be able to do with my iPhone, is the ability to turn off predictive text or and be able to add/delete words on you own.
You can already turn off auto-correct. You need to mod, but it's an easy one.

Is your calculator a computer? Computer like functionality means... well, functioning like a computer; the ability to install and run programs being the main function critical to a computer.
My Sony Ericsson W810 is more of a smartphone than my iPhone. I can install programs on that at least.
I just paid my recent bill and had 64$ worth of data usage when in Vancouver for a single day. I would love (other then airplane mode) the ability to turn the data mode off when out of the states.

Yes, precisely. Thank you for posting that. I saw it before. It's a great idea, but you know what? I'll bet Apple could come up with something even cleaner. They just don't want us to have it.
Oh, you know what? It's a minor detail that could be easily solved, but what if you already have something on the clipboard? You bring up the loop and click with the other finger. Rather than it going into copy mode, it goes into paste mode. What if you want to go into copy mode? There would need to be a button for that.

Just unzip the attached file and place Keyboard.plist into /Applications/Preferences.app on the iPhone.
The will turn on the Enable Autocorrection option, within keyboard settings.
