When I go to my email (hotmail) from the email icon I don't get to see all my folders. When I go in from the hotmail website, I can bring up all my folders (junk, sent items etc). Is this normal or do I have something set wrong?

You will only be able to see all your fielders on the iPad if the email is set up as imap and not pop3. Check and see if you can set up hotmail as imap if so then they will show up. I will try to do a search as well.
