No. You cannot restore to old firmware when new firmware becomes availble, unless you have a full-version SHSH. There are multiple reasons why you might need to restore after 6.1.1 comes out. And if you find yourself in that boat and the devs haven't found a way to make OTA SHSHs work or made a 6.1.1 jailbreak, you will be forced to update to 6.1.1 and you will lose your jailbreak. 6.1.1 is jailbreakable, but there is no guarantee we'll see a jailbreak for it soon. It's just a matter of time, one of the upcoming updates is going to break the jailbreak (probably 6.1.2 or 6.2), so that 6.1 SHSH is crucial. Like I said, you can do this any time before 6.1.1 comes out.

This only takes TEN minutes. It surprises me that there is so much resistance. I guess it's because people don't understand the importance of backing up their blobs.

When 6.1.1 is released and the evad3rs don't update evasi0n to support 6.1.1, you are screwed if you don't have the blob when you have to restore. Apple will eventually stop signing for iOS 6.1 which will force you update to 6.1.1 if you want to continue using your iDevice.
So what are you talking years? I've never heard of anyone being forced to upgrade firmware but if they were I'd be willing to bet that a jailbreak would be available by then. If something happened & I had to do a restore later after new firmware is released a jailbreak would be the least of my concerns.

I'd be a rich man if I had a dime for every time I read a post from someone who had inadvertently upgraded their firmware in the last five years.

Happens all the time. People are forced to upgrade every time they have to restore when a jailbreak for the current firmware version isn't available and they don't have their blobs backed up.

You do remember how long this jaibreak took, right? The 6.2 jailbreak could take a long time. Maybe months. Maybe we'll never see one. The 6.1 blobs might be very important in the future.

Sorry, I didn't realize maintaining jailbreakility was so unimportant to you. No need to back up your blobs in that case.

Maybe I'll do a restore this weekend when I get a chance. One question, if I use the backup I did before the jailbreak after the restore will that matter?

That's fine. Be sure to save your blobs with TinyUmbrella after you restore too.

I was pissed for the first day. But my phone is awesome now.
If log into cydia Evasion has sent some updates that fixes a lot of issues. I got weather app back after it kept force closing.
All my mods have worked great.

I'd do it just to be safe. You can use your backup, so you're not going to lose any settings or data.

Can we still save the blob in Tinyumbrella after we've already jailbroken or does it have to be done prior to jailbreaking?

TinyUmbrella is telling me Apple is not longer signing for iOS 6.0, 6.0.1 & 6.0.2. Am I reading this right? How do I know my SHSH was saved successfuly? I see the SHSH was found and cached. Am I good to go? I haven't used TinyUmbrella in quite some time. Thanks!

Correct. They are only signing 6.1. We don't have any need for the older ones since there is a 6.1 jailbreak. It saves a file on your computer. I used a Mac and it saved mine to the desktop. On a Windows 7, I think it saves it to users/your name/.shsh folder (or something like that).
