I just restored my iPhone, because I am not going to risk there being an over the air software update while i'm not expecting it, thus leaving my phone a nice looking paperweight. Anyone else do this, or have reasons why i shouldn't have?

hmm.. I wouldn't sweat it. Any update via OTA or iTunes, SHOULD promt you to proceed. I don't think it's gona sneak in without your consent.
True, the iPhone will not just update itself w/o prompting, and for now there are no over-the-air methods of syncing with iTunes or updating the firmware.
Like they already said, iTunes will prompt you when there is an update. But like you, I did restore my Jailbroken iPhone over the weekend so that it is ready for the latest update whenever and if it ever gets here.
