I updated a couple of apps and my screen is black. The only thing that appears now is the sunburst (which thankfully works) of course I have modded my iPhone. Did this happen to anyone else?

That happened to me a couple of times. I'm new to modding phones and couldn't find a way out other than a restore. But, since my last 'blackout', I read some tips to try before restoring.

Does your dock still appear with some icons? If it does, download rsbt from the installer.app and you should be able to arrange what will appear on the home screen. You can choose what to keep hidden and what to display on the home screen. It sounds like most of your apps are hidden.

No. The screen is entirely black. All that is there is the bar at the top that tells the signal and the sunburst in the corner (which works). Also my settings have changed to where if I press the circle button, the phone locks instead of turning back to the main menu.
Are you able to access the installer? If so, then I would suggest that you delete each app one at a time and see if that corrects your problem. Something it causing your phone to act weird. The only other suggestion I can recommend is to do a restore of your phone.
