While other teardowns have been published, this one actually goes into much more detail with the chips.
It looks like the radio is an Infineon product. I don't think there is any latent 3G capability. And no chip number was given for the GSM RF transceiver.
Update... it does appear that the Infineon chip is the real brains of the iPhone, providing the ARM processor. The chip datasheet mentions that it can be upgraded to 3G with a WCDMA coprocessor (it's other RF functions are GSM). So there's still a glimmer of hope for latent 3G on the iPhone.
