I'm wondering what the difference is between going to jailbreakme.com to JB my device and using something like redsn0w or sn0wbreeze or some other JB.

My friend is wondering if jailbreakme.com is a "full jailbreak" or does it just install Cydia and do nothing more.

The method doesn't matter so long as you get Cydia. In fact All the jailbreaks just install Cydia and do nothing more. That said, other methods can create "customized firmware" that saves you an "image" of the firmware if you are looking to unlock.
But to answer your question, when you jailbreak, you want Cydia installed. What else do you expect? Cydia is where you get the apps that aren't allowed in the Apple App Store.

As jailbreaks go, JailbreakMe(only suitable for ios4.3.3) is by far the easiest method to use if you are a novice jailbreaker....

Do the other ones do anything more to your iDevice that Jailbreakme doesn't do?
I believe using Redsn0w, at least on the iPad, allows you to install the option to use 4 & 5 finger gestures. I did not find that option available using JailbreakMe.
