I just picked up the 256GB model. The added size will allow me to install a proper Windows 7 partition and have zero concerns about memory. My wife has the 128GB model. With our new baby, we are photo crazy. Today she got the startup disk almost full message. That wouldn't be a problem if her husband would have gotten her the 256GB model.

I have a 128GB MBA as my only laptop right now, and so far I have more than enough space. Granted, I mainly use my MBA for writing, so it's not like I have huge image or video files saved on my drive
Good choice! I considered the 11" MBA, but thought the smaller screen would be too cramped for me
I agonized over the choice between 11" and 13". I originally thought I wanted the smaller model, but after using both in an Apple Store side by side, the 13" model was a better choice. The difference in portability is negligible but the extra screen real estate is significant.
Because there is no dedicated graphics card the faster processor is important. You should also ensure you're using the maximum RAM possible.
