Is it possible to have an me.com mail account and not sync your mail to iCloud? I'd like to have the email on that domain, but do not want my iPhone4 to sync with iCloud. Anyone have success here?

I'm still on iOS 4.3.3 and I just successfuly added my @me.com email account to my iPhone4 using this method. Not sure what would be different if you're on iOS5.
iOS 5 will allow you to use both MobileMe and iCloud accounts...at least until you migrate your MobileMe account to iCloud, or July 1, 2012, whichever occurs first.

Once you migrate your MobileMe account to iCloud there is no going back. Then you simply have to use iCloud for mail. No way around that. But until you do actually migrate to iCloud you can certainly use MobileMe Mail on your iPhone without the cloud.
