SMS Bubble Color

I just got an iPhone last weekend and I'm still trying to figure things out. I went to a new message and instead of the green bubble, it changed to the color blue.. Then I text someone else and it was green again. Anyone know how/why it does this?

The bubble is blue when you are texting someone with iOS 5.0 using iMessage.

It's automatic as long as you have iMessage enabled. Bubble color selection is not customizable by the user.
