Syncing: what syncs?

Just a general question - when I plug my iPhone into mac, I know the music and apps sync, but my Contacs sync as well? Do my emails and SMS texts sync too? Thanks!

SMS messages are backed up but not really synced as such. Contacts and mail are backed up and also synced if you have the corresponding boxes checked. There is a list of what all is able to be synced here: http://support.apple.com/kb/ht1386

Correction: Mail messages are not backed up but mailbox account settings are.
